Ah, generally speaking and all things being equal, with a TSU applied I'd go with the Grand Hyatt.
For most visitors especially first time or infrequent ones (not suggesting it's your first time visit), I think it's better to stay in Central, as opposed to Kowloon. While not the most convenient location, the GH is definitely a nicer property, staff/rank & file are incredibly refined & polished, and the lounge is the best in the Hyatt portfolio with free flowing Ruinart, in my view. The breakfast menu generally will have some neat to order items. If you can score a Harbor View suite on the 30'ish plus floors, it's no brainer to opt over the TST. Also, if I recall, if you don't mind walking, it isn't too far to catch the Star Ferry into Kowloon.
Where the TST is better is for the location and my preference. Having worked and lived in Central, these days I appreciate more of the flavor on the Kowloon side, since it offers me an aspect of HK I really didn't have the opportunity to experience during my expat days. So, these days, the properties I'd probably choose are all on the Kowloon side, namely the TST, the Pen or even the new Regent.
You can't go wrong with either, but I'd recommend a suite at the GH. You won't regret it, enjoy the property immensely, and have a fabulous time in HK. I'd recommend allocating a budget to taking taxis because they're so convenient and cost effective in HK, which will offset some of the limitations of the GH's location.
