This is really dependent on the vendor accessing the API. Sabre will present it differently than other GDSs, or third-party tools enabling access to NDC. The quality of data (i.e., prices, connecting options, etc) and the actual presentation are separate challenges, as I understand it.

The tutorials I've seen (I haven't actually been granted access to NDC yet) suggests that a Sabre PNR will be created so an itinerary with hotel, car, service fees can be booked/invoiced.

Yes, branded fares are still very much a thing, including with AA. I think NDC fares will still be filed in the GDS as well, even though they have to be ticketed through NDC channels.
