I would have made sure that unreliable cell service in the mountains would have caused the call to drop before I could provide the CC number. If they actually went through with cancelling it I suspect it would be relatively straight forward to reinstate the reservation.
Unless the hotel was oversold and it being late in the evening, I can imagine that reinstatement might not be possible.
