Thanks for the response. After some finagling and playing around with the site I managed to pull off an even better end result:

I cancelled my Roundtrip EWR-TLV Trip and got a flight credit of $847. Rebooked a 1 way flight EWR-TLV from that credit for $592 so I now have a 1 way ticket and a $255 credit for later. Wife is on a separate PNR but is still in her E+ seats both ways. One of those situations where if she wants to move seats they will charge her a ton but since I was originally attached to her PNR during seat selection she is "grandfathered" into her Aisle seat on both legs.

I was playing around with it online and had an agent confirm it with me over the phone that a Multi City Trip would be considered a more expensive fare class than a 1 way and that even though it didn't seem correct, that me booking the 1 way would in fact be cheaper then changing my flight. At least now I have my flight situation squared away and with a nice credit to boot as well which is being used on a Cancun trip this summer which I need to book.
