Had this happen once on JetBlue but it was only a 45-minute delay, and it wasn't anyone's fault -- the hinge just sheared off. They taped the second bin door closed and flew with the broken door off, so you could see right into the bin. IIRC nobody knew what to do with the bin (I had asked if I could take it home as a souvenir, but they politely declined), so the lead FA tied a gate check tag to the hook and said to let the destination airport (a maintenance base) deal with it

This was in 2018 or 2019.
ETA: this was one of their older aircraft, and the bins are actually Heath Tecna mods -- the first "extended" overhead bins for the A320 series. These paved the way for future redesigns by Airbus and other companies such as Zodiac.
