chaiman was no better than lei garden IMO. In fairness, it has been pre China take over since I've been last in March 2019. Food was good. Service was ok but location was terrible and the old building on kau u fong was really really dated. Maybe that influenced my views. Funny they seemed to have scrubbed the photos from there on the Google. Had the ambience of someone's home. I've only been to tin lung heen, lung king heen, both very good, 4 different lei gardens, best location is times square imo, the eight, Fook lam moon, which was better for sure, yan toh heen, also good. Duddelles probably before it was rated by anyone and few others. Also the French places like caprice and others but I'm not a fan of that but that's me. But maybe things changed with the move but since the hand over, I'm probably useless for views since if anything is like other places, three years has changed a lot. Maybe I'm a sucker for views and fancy places admittedly I was not paying for most other than the 8 that fell on my personally.
Oh ok. I only care about the taste, and I find that the Best Restaurants listing weighs taste the most vs Michelin.
Tin Lung Heen has the best view, but actually not good food (I was there years ago before the Michelin guide in hk so don't know if the food changed, but I'm not going back). Lei garden is not bad for the price - the ranking is about right but the food nowhere touches the Chairman - I would go back to Lei garden though. Yan Toh Heen I was there years ago before the Michelin guide and also after - I think the food actually gotten worse since the guide - I won't go back now.
Macau - The Eight (not really traditional cantonese) and Jade Dragon the taste are just too heavy. The views and presentations are really superb, and I can see the Jade Dragon chef has the skills - it's just too heavy for my cantonese palate.
Lung King Heen is light and excellent, but I can still be picky about its food.
The Chairman I've eaten there many times and tried almost everything on the menu I think. I can honestly say I can't really find fault with anything it has - it reached my discerning limit on taste. Yes it's ambiance is not good (and worse than Lei garden if you ask me). Yes its service is lacking (if you don't know how to appreciate their food they can be outright rude - I'm fine with it and they'll talk food with you all day if you know what you're talking about). I see that they've upgraded the dining room now, but it's impossible to book.
I'm not knowledgeable or experienced enough about French to talk about it. But taste-wise I agree that the hk michelin guide has star inflation over the french counterparts - generally the places in france with the same number of stars taste better.
