I'm not easily impressed with most places, but I was impressed by the chairman. I go back multiple times (last time I was there was a few years ago - not sure if you can even book it now). I also go back to lung king heen multiple times for dim sum only, but it's not perfect every time.
Macau cantonese generally caters to mainland chinese and all have heavier taste which is not my traditional cantonese preference.

chaiman was no better than lei garden IMO. In fairness, it has been pre China take over since I've been last in March 2019. Food was good. Service was ok but location was terrible and the old building on kau u fong was really really dated. Maybe that influenced my views. Funny they seemed to have scrubbed the photos from there on the Google. Had the ambience of someone's home. I've only been to tin lung heen, lung king heen, both very good, 4 different lei gardens, best location is times square imo, the eight, Fook lam moon, which was better for sure, yan toh heen, also good. Duddelles probably before it was rated by anyone and few others. Also the French places like caprice and others but I'm not a fan of that but that's me. But maybe things changed with the move but since the hand over, I'm probably useless for views since if anything is like other places, three years has changed a lot. Maybe I'm a sucker for views and fancy places admittedly I was not paying for most other than the 8 that fell on my personally.
