The problem is the shrimp was already on the salad. The FAs don't plate the food anymore. It comes plated. For the FA to remove it, the FA would have needed to either pull it off with her hands or find a fork to do so. Personally, I would trust anyone not simply to use their hands, so I'd prefer to do it myself in this situation. And, I suspect the juice from the shrimp had already contaminated the salad, so she probably wouldn't have wanted to eat it anyway.
