The Hilton has its shuttle boat which goes to San Marco ( EUR 10 pay stay if you use it) as well as the vaporettos nearby compared to the Hyatt needing to trely on the public vaporettos
Hilton on Guidecca is in a quieter area with less tourists. Hyatt on Murano will be busier during the day but will quieten down in the evenings
the Hilton has an executive lounge
Hilton has a rooftop bar with views across the guidecca canal
Hilton has a summer seasonal rootop pool
