How does the EoA work? Do you still get to skip the customs line while they escort you to the EoA location?
There's a dedicated thread on EoA Global Entry Enrollment on Arrival
The process is pretty much the same for adults and kids except one parent needs to be present, bring the birth certificate, and they don't do fingerprints (at least for my 1 yo, they didn't)

tl;dr: At immigration (before luggage claim/customs), tell the CBP officers you want to do the EoA interview, and let you know where to go. You wait for your turn or an CBP officer to be available to interview. After you're done with the interview, you go grab your bags, go through customs, and either head home or onto your connecting flight.
I do NOT advise trying to do EoA if you have a tight connection (or really anything less that 2 hrs) because how long you have to wait to be interviewed depends on:
1) how many are ahead of you in line waiting to do their EoA
2) how many officers they can spare from the main line to do interviews
3) said interviewing officer doesn't disappear for 20+ min for a break (yes, that happened to us)
