The SFO > CPH will have a layover, and depending on the flights, the layover is either in FRA, AMS or JFK. Is a Europe layover more ideal than JFK?
Flights from Paris > SFO will be nonstop.
Will likely fly premium economy but also want to consider differences between premium economy and business between the carriers.

IMHO a layover in JFK is the least desirable option. I would **always** pick a European layover over a US one. There is less security drama and no annoying constant airport announcements (the US majorly overdoes this to frazzle your nerves).

Another reason- NYC-area airports are notorious for delays and ATC problems. I can't tell you how many times I've been #56 for departure from JFK. I don't know what these people do but organization is not high on their list.
Moving onto airlines, my favorite J experience of the three is AF. Then KL and LH in that order. I don't like LH because of the 2-2-2 configuration. Service is meh.
I can't speak for PE on KL or LH but AF is not great... maybe others can comment on the new PE product.
