Out of those, AMS is probably the best layover.
From CDG, the AF/DL flight will go from T2E, while UA will use T1, which is a decided advantage for AF/DL.
PE product wise, the general consensus of late on FT is probably:
UA/KL joint best (good recliner seats, discernibly better catering than economy)
DL (good recliner seats, catering difference is erratic: supposed to be the chicken and vegetarian mains from D1 with economy everything else, but too many datapoints of that not happening for whatever reason)
AF (differentiated catering, but likely to be the worst PE seat out there)
LH (good recliner seats, but economy meal with better plating and IIRC, charges for booze)
