I have lived there 8 years and here is my take. Stayed at FS Dubai recently, got upgraded to Premier Seaview room and I can't say that I loved the side building views. You have to step out on the balcony to actually see the sea as your front views are facing the other side of the building. The rooms finishes and bathroom were very nice though. Spa is very nice and so are the therapists. Sea Fu restaurant is excellent with Italian manager. Breakfast was amazing, definitely one of the best quality breakfasts I had in Dubai. I am not a fan of the beach views from FS - they are overlooking public beach strip. Nammos does add some ambience and noise which is good and bad depending how you look at that. Spa is very close to Nammos and it can be heard. Mercury lounge was rather a disappointing experience, was hoping for a great shisha with fantastic views and it turned out to be a cold, windy experience with hookers lurking at you.

Did not stay at MO but saw the junior suite when my friend was visiting. They have some excellent restaurant Tasca, we also enjoyed the shisha on the hotel's ground overlooking the sea. I think MO have the best sea views from the big three hotels (Bulgari, FS) and everything at this hotel would be top except for the fact that the beach itself is public with a public pathway to cross the hotel to/from La Mer.

I can't comment on Bulgari as I did not have chance yet, I heard they have the best spa. My personal favourite hotel is Ritz Carlton JBR. The rooms are very nice (unfortunately a tiny balcony), the spa is excellent, massive and beautifully landscaped grounds, huge selection of restaurants, widest and the best part of beach form the whole JBR section (if not the best in the whole Dubai). Fantastic views of Ain Dubai, Palm, new Harbour Marina. It is walkable to JBR & Marina. It has the best location on JBR due to being right next to roundabout, so you avoid heavy traffic going inside of JBR. My 2nd favourite are Jumeirah hotels, especially JBH (those side suites have excellent views with massive terraces), Al Naseem and it will be interesting to see Jumeirah Marsa Al Arab which opens in Q4 this year.
