The Outcome

Regarding the original post, things worked out fine in the end. I contacted the hotel GM's executive secretary, who had another Hyatt staffer follow up. The staffer contacted Hyatt CS, which repeated that alcoholic beverages are not eligible in this jurisdiction. The hotel called me back; I said I needed stay credit to requal for Diamond and would be happy to make a purchase from the gift shop after the fact, if necessary. He said no problem, they would recreate the original folio clearly showing the charge as an eligible expense and fax it to Hyatt CS. A copy was sent to me; it labels the charge somewhat differently (but not too differently) than before, and no asterisk is present.

Over the weekend, the Hyatt Regency Denver posted as a stay on my account, requalifying me for Diamond in 2005. BTW, I must say that this hotel is really nice. I scored a suite upgrade; the suites are very large and well-furnished. The Regency Club is comfortable and has a good selection of hot/cold evening hors d'oeuvres, wines, breakfast items, and newspapers. The concierge is also most helpful and friendly. The watercolor artwork throughout the hotel has a refreshing Rocky Mountains theme, and a take-home brochure is available picturing and describing the key pieces.
