It is overwhelmingly likely (can never say with absolute certainty, of course) the perishable catering from the original departure was destroyed and the replacement flight 24h later was re-catered, pursuant to food safety guidelines. Especially for an IAH departure, where there is no shortage of supply of Polaris entrees in the freezer for a given menu cycle 😉.
There are shelf-stable items, and the bar carts can be reused of course. But Polaris entrees are not boarded frozen, and once they are thawed they cannot be re-frozen.
