Question about booking Polaris vs "Regular" Business Class, Is it or isn't Polaris?

I am moving to LA from Boston and I would like to treat myself to a one-way Polaris flight. I'm originating in BOS so I would fly BOS-EWR (any class) and Polaris EWR-LAX on 4/17, with the opportunity to enjoy the Polaris lounge in EWR.

But I noticed that the 757 flies direct BOS-LAX with lie-flat seats on the 757. How much less of an experience is the "regular" business class?

I found that I can book separate flights and separate PNRs for BOS-EWR and EWR-LAX for a lot less $$$ than booking BOS-EWR-LAX if I book the BOS-EWR leg in economy. If I did that, could I call in to have UA connect the PNRs and would they check my bags all the way to LA from BOS? I never ever check bags so I am unfamiliar with the process but this time I will have 2 checked bags since I am moving. If I booked 2 flights and mixed cabin, what would they charge me for 2 checked bags?
