I have changed the way I work to accommodate this, so I'll get the laptop out before take-off, but tethering from my iPhone switch to wifi where I find over the UK it's fine, then after about an hour or so, they'll serve food, so I'll put it away whilst flying over Greenland and get it out again once we're over Canada - it's just too problematic and you end up spending so much time trying to do anything you end up doing very little.
I guess my profession doesn't help: I'm in IT, meaning everything I do is online, so it's always trying to load data. I guess if you worked offline (spreadsheets etc), you won't notice poor wifi as much as myself.
I would typically be working on a word, excel or powerpoint documents or clearing down emails so my data usage would be relatively low once I have downloaded as the only data moving would be small updates as I work.
