It also assume that one has time to stop into the Polaris Lounge and have a meal and if one is making a conneciton that is not always possible.

Plus outstations do not have Polaris Lounges and the UA contract lounge does not always serve a hot meal, let alone one served like in a restaurant.

I personally think they sunk a lot money into the Polaris Lounges and that money had to come from somehwere and that is the on-board catering.
