Unfortunately, I have many of these stays myself, which is why I have a high number of nights / year, but find it very hard to earn ambassador, since my actual spend (technically) is low.
I just had a recent experience with this situation. My company had a large block of rooms for our internal conference and all were setup on a single master bill. At check-in we did give personal credit cards for incidentals. I charged one bar tab to my room and got credit for the nights of my stay plus the correct points for my incidental spend at the bar. For a previous stay at the same property about 6 months earlier, I didn't charge anything to my room and I didn't receive credit for the nights. For the current stay where I did get credit for the nights, a colleague didn't charge anything to their room and they didn't get night credits.

Distilling it down, charge something small to your room, assuming your paying for incidentals, and that will trigger a non-zero charge folio and you will get credit for the nights. If you don't it will be a zero dollar folio and you likely won't get credit for the nights.
