Plenty of FT'ers may try to scare you from doing this.

In my opinion, if you're aiming to "skip-lag" the final leg HKG-TPE, to simplify things, you shouldn't check any bags, find a way to carry-on.

However, if you change to the 15hr layover, you should be able to retrieve them for the layover, and then just walk out through customs like normal, etc. You need to request them to "short-check" your luggage at the CX ticketing counter in AMS, so that they tag them accordingly to pop out at HKG. I doubt it would be possible/plausible for a mere 2-hour layover. For security reasons, most airlines will pull your checked luggage off the flight if you do not board.

As for any consequences, since it's the final leg of your entire itinerary, I don't think there'd be any, assuming you're okay writing off that final HKG-TPE ticket. Plausible deniability. Who's to say that you didn't meet your future wife/husband enjoying a cocktail at the Old Man or imbibe a little too much mezcal at COA?

If you have a frequent flier account or mileage earnings associated with the reservation, you risk CX closing/forfeiting them, especially if it becomes a pattern.
