Sawada - > huge pieces, very salty shari, very good maguro and uni. Inomata is not a bad substitute for Sawada; they both source amazing maguro.

Sugita -> milder shari, prep/execution and ingredient quality are top notch. Very hard to book. Hashimoto is the obvious alternative since he trained for years with Sugita san. But it is now also pretty hard to book. https://tabelog.com/en/tokyo/A1313/A131301/13238306/

Yoshitake - only foreign tourists go there, some good otsumami but forgettable nigiri. I'd recommend Sushi Ishiyama Ginza as a perfectly fine (and easily bookable) alternative.
