That is the case with every hotel, and also big limitation of relying on concierge to book for you.

Sawada might be a last minute possibility for you as he opens seats on Omakase one week in advance, with the caveat that the majority will be single seats, but it's possible to luck out and grab a reservation for two.
Suzuki in Ginza maybe another option, his dinner is a bit pricey but lunch is a good value.
If you don't mind a small trek to Saitama and paying cash, Inomata (a Tabelog silver) is pretty much always available.
Invalyd's recommendations are spot on. Inomata is excellent and easy to book, and Suzuki is great at lunch. There are so many great sushi shops in Tokyo that are easy to book. Happy to provide alternative options if we know your four top choices.

Also, of course, the concierge service at RC Kyoto is better... its a 5* luxury property. Prince Sakura is a passable 4* at best.
