It probably depends on where you're going. Naples qua Naples is probably not a holiday destination but nearby resorts might be busier than a week earlier or later. I took trains on May 1 a few years ago (Bologna-Milan) and they were packed. A friend booked a slower train (lower price) and may have stood for most of the trip.
