Correct. Credit cards aren't really prevalent in Taiwan still. Chains / retailers will take credit cards with more frequency. Paying with a transit card is also more common now (the same "EasyCard" you use for the subway) but for most night markets and street vendors, cash is your only option.
I would recommend you still get cash out, and then at the end of the day, you can put whatever remaining balance you have on your EasyCard transit card (provided you get one), or buy some food at the TPE airport food court.
