You're overthinking things. Amex is a travel agency. You are buying a normal revenue ticket from Amex Travel, no different from buying it from Expedia or even United itself. All Amex is doing is refunding the ticket price back to you in exchange for your points. The booking class should clearly show on your Amex confirmation and you can upgrade per whatever rules apply to that fare class.
