It seems agencies like JTB, HIS, and NTA, as mentioned by other posters, can offer what you're looking for. If you're looking for a more custom/bespoke service, there's a company called Wondertrunk. Disclaimer, I have not used any of these companies as I'm more of an independent traveler. I know about them through planning prior trips and information posted in this forum.

For restaurant reservations, do you have places already in mind or going with whatever the agency recommends? Be aware that there is a trend of some restaurants (skewing more towards very popular, hard to book places) refusing bookings through third parties and requiring customers to contact them directly.
