Window seat (for each kid if there's enough adults to go around) and cockpit tour is the way to go. I would suggest not trying to actively do too many things - the whole airport and flight experience is going to be amazing for them anyway, I would truly just let them marvel at it. They will. I still do every single time, and it's <<redacted>> years since I've been under 10.
