If you're just looking to put your spend from Loblaws/costco to an Amex, you can look into buying normal visa/mastercard GCs from grocery stores and do it that way. For costco you can buy a shop card with a $500 MC GC and then combine all those shop card balances into one card, and keep that to buy things.
Trying to stay away from Visa/MasterCard GC because of the fees

Another misunderstanding, when I mentioned two Platinum cards I meant to say mine and my wife as a secondary card holder, we need it for entering the lounges with 1 guest each (Two kids)
