Not quite enough to go on here. I have done research on 3 adult scenarios for Europe, but you have more options with a small child. You don't say if you are expecting to use points or cash. Point bookings for this summer will not be particularly easy to find.

I would start by just going to the Hyatt site, plug in date range, 2 adults and 1 child, then just enter "France" or "Italy" as the location. You can then look at the map that pops up with prices and see what might fit the bill. If I had a 2 year old, I would be focusing on maybe beach/pool locations (7 Pines Ibiza?). A suite would likely be preferred as you might want to be able to close the bedroom door while the young one naps.
