To each their own, it could have been 4 proper mains options + 3 or more different snack / any time menu options. Instead you now have 3 mains options + 2 (cheaper) option from the snack menu added to that and that two same item exists in the snack menu so overall one less “main” to cater and two cheaper dish to added to the mains option.
It gets more interesting on red-eye ULH flights where you get 5 “mains” option for supper but actually one option is really the starter on other flights (usually soup), then 2 cheaper dish from the all day menu and so only 2 proper main offered from. Now you can’t argue that a tiny cannelloni bean soup costs the same to cater as a braised duck dish…
Trust me people can get very creative when it comes to cost savings.

On one past flight the same vegetarian risotto dish is repeated in 3x different places on the menu.
