It depends.
Steak on a flight is "risky" because the odds that they get the doneness to your liking is relatively low. You'll also hear a lot of complaints about steak because there is a wide variety of preferences in doneness. A perfectly-cooked medium rare may be slammed as "disgustingly undercooked" by someone who prefers steak medium-well or worse. And someone who likes medium-rare will be horrified about being served a piece of shoe leather if the steak comes anything higher than medium.
For other preparations, notably braises like short ribs, stews, or pot roasts, doneness is not a factor (it will be fully cooked and it's difficult to overcook these cuts) and
can be more universally liked.
