1) about Indonesian cuisine in Amsterdam
Tricky one:

I believe my own mother's home cooking is still the best Indonesian: Javanese Yogjakarta cuisine,
it at least swayed my father to abandon the Kiboetz to elope with her!

But Indonesian food is much more diverse because of the huge archipelago of island & cultures.
All my Jewish relatives seem to love Indonesian Padang cuisine (hot, hotter, hotest!)
The kids love the more hearty & spiced Indonesia Toraja cuisine

I've asked around though and the consensus is this
- service is at a slow pace so come early and don't be in a rush
- always ask for the home made sambal (spicy tincture hot sauce)
- some restaurants cater to regional Indonesian cuisine, other to Dutch-tastes adapted, some are vintage retro chinese-indonesian

(this one is recommended by me personally,
it used to be an Indonesian restaurant but it employed refugees from Tibet whom mastered the art of Indonesian cuisine,
after the orginal Indonesian owner decided to sell his place due to old age, the Tibetan kitchen staff took over and transformed it into a Tibetan restaurant,
whilest still cooking & offering Indonesian cuisine,
the ambiance is really unique Tibetan, it has a lot of regulars, it still gets an approval of my mother concering quality of the Indonesian dishes,
and the wide range in dishes suit everyone while under the smiling gaze of the Dalai Lama)

take a taxi, authentic but becoming more frou frou by the hour with portions getting smaller & prices getting higher, yet the entourage is something different

Damn it all man, so much homework for this evening .... I was hoping you were just going to take the 'thinking' away for me

No is a super resource Hades. Of course being a near honoree Dutchy (well visiting from the island each week for many many years) I used to know the territory well. But alas has been a while and better to consult a seasoned professional and expert rather than rely on distant somewhat alcohol fuelled memories.

Thanks for this Hades ... no doubt I will come back with more Q&A and take advantage of your knowledge again
