They give pretty good quality noise-cancelling headphones. They don't compete with the best consumer headphones, but they are good enough for the purpose.
The ones AC provides use a 3 prong plug, not sure if a regular single prong plug would even work, as I've never tried it.
The only time I bring my own noise cancelling headphones is when I'm in PY or Y or J in non-signature class.
For what its worth the AC ones in signature class are pretty decent.
