Nothing is ever that easy with catering. 😊 "Universal" meaning it's one meal code in AA's system tying to one entree (frequently a code has more than one entree in rotation)... It's not universally available on all lunch/dinner flights, for a variety of reasons. So if you kept that as the only chicken option, many AA flights would have no chicken option ever, and people that don't eat meat but not beef would only ever have one protein entree option on all non-premium domestic flights.

The initial issue here was that the description was the same for both the mid-con and longer range grain bowls, when only the longer range grain bowls were offering the salmon. Anything can be miscatered anywhere, but once they fixed the descriptions last year, the reports of salmon not being loaded on the short flights dropped as expectations realigned.
