I have knowingly requested a seat on a flight that was sold out, which Air NZ did give to me, I assume on account of my fare class and status, due to a late arrival of a connecting aircraft. The check in agent and Star Alliance gold desk at the domestic terminal made a call, and got the approval. I assume the person was off loaded was compensated. Anyone who has a problem with that should take it up with Air NZ's business practices

My advice is don't take the last flight of the day, and try to avoid taking flights in afternoon. The bank of morning arrivals from the US will spill over to the afternoon.
So why didn't you take your own advice then? So you didn't end up in the situation where you did a DYKWIA and pressured front line staff to off load someone? Most people plan ahead and take what is offered to them rather than demanding things.

Just because it happened to someone else doesn't make what you did right or ethical. I would reconsider friendships with people who act like Karen's when they don't get their own way.
