For a National parks trip, go with something that you feel confident driving on very narrow twisty roads with no guard rails that switchback up the side of canyon or mountain.

Also there is language in the rental contract that you aren’t supposed to take the vehicle off pavement. Your call on how closely you want to follow that but something like the Maze part of Canyonlands would probably not be a great idea.
