Interesting point. My daughter speaks perfect Chinese but not Italian. We passed our initial interview about 5 months ago, but it will take 18 months to get passports. Between learning the Italian and waiting to get a passport, probably not feasible for her.
FYI - Lot's of EU colleges that have English language programs.
Back on topic - I'd stay somewhat close to NYU so your daughter gets a feel for the area. She'd be spending lots of time there. March start to get expensive and you could consider putting the boys up somewhere else (cheaper) that allows 3 in a room - staying yourself in two rooms closer to NYU. If budget allows the standard is fun and good value. Cheaper would be Citizen M - tiny rooms but the girls will like the vibe. Sonder has apartments but not in great locations.
