Suggestions for Accommodations and transportation options for a visit to NYU

My 17-year-old daughter (junior in HS) would like to check out NYU. (We live in Cincinnati Ohio) She has her spring break in Mid-March. I have never visited NYC and know little about it other than a talk today with a friend of a friend today. My daughter's brother (a senior in college) will also be coming as well as two of his college friends. Also, there is a chance that one of my daughter's girlfriends will be becoming. One way or another we almost certainly will be staying in an Airbnb. (Chance that I will split up the females and males) I understand Chinatown and Little Italy are reasonably close to NYU. Both my daughter and son are interested in both Chinese and Italian culture and food. (My children are half-Chinese and 1/4 Italian by ethnicity and will probably obtain Italian dual citizenship in about 18 months) Not looking for anything fancy. Simply something reasonably comfortable and safe.

Also, I am wondering about how safe the subways and potentially other public transportation is and whether there are any times or places to avoid on the subways.

I realize there are many, many fine attractions and restaurants in NYC, but if some people could mention what they consider the best that would also be helpful

One final twist and question. One of my son's friends has been accepted into Columbia's grad school. I understand Columbia is a good hike away from NYU. However, are there reasonable ways to get from the NYU area to Columbia. (I would assume there are)
