I've tried all the major Vegas buffets and the quality is just not there, whether it be the ingredients (poor cuts of meat, seafood that is meh), flavor or the preparation (overcooked, oversalted, dry, etc). Everything is cafeteria level. I've had great AYCE buffets, but NOT in Vegas.
It has to be average food, not too spicy, not too exotic, to appeal to large numbers of customers. And it has to have moderate food costs. So it's really by definition not possible to have great food.
