And this is the part I have serious doubt on. Even if this "AI" is not developed by Amadeus, it would need to be well-integrated with Amadeus to make it happen (for those airlines that use Amadeus).

How do you know the overall availability didn't decrease. Why do you assume a booking definitely has seat assigned? Seat maps are not always a reliable indicator of seat availability. It is also possible it was a coincidence: LH simply decided to change the availability of the particular flight combination due to other reasons, unrelated to your search.
These things don't need to be in Amadeus. Just airline "own" logic/IT. I have zero intentions to say, there is automated AI behind these things. It's just "reporting" and the human decides to change fare bucket availability. As such, I reported this happening "overnight".

Of course, seat map doesn't say everything, though no availability changes over higher booking classes does say something about the availability (provided <9).

Having this logic in Amadeus would not be ideal for airlines, since this fare bucket stuff is their make/break the airline, so, highly guarded secrets. As brunos writes, it is the airline logic (and the humans over there), which decide about the availability in Amadeus. Changes will be fed back into Amadeus.

Though, just feel free to know better, reality seems to be different.
