I believe you have to meet all requirements of the fare.

You would have to meet the 7 day minimum stay requirement (which would include a Saturday stay).
The fare over does not allow enroute stops, but the return fare allows a stop-over.
You would only be allowed to stopover on the return, not on the outbound.
