First Wine List

Champagne

Pommery Louise 2004, Champagne, France
In 1874, Pommery created the first Brut Champagne, breaking with the traditional taste of sweetness. The purity and finesse of this wine shares the Houses character imbued with femininity and elegance. The palate is decadent, balanced and silky. Floral characters are elevated by hazelnut, yasty characters and almond paste. The finish is long and polished.

White

Grosset Polish Hill Riesling 2013, Clare Valley, South Australia
Jeffery Grosset is one of Australia's most talented winemakers, producing wines to achingly exacting standards, from viticulture through to cellaring. Tasting this wine must surely be one of life's 'checklist' experiences, with a depth, complexity, structure and elegance rarely encountered. To begin, the nose displays lime and floral characters, but there is an underlying minerality and vibrancy on palate that follows with a staggeringly long, elegant finish.

Shaw + Smith Sauvignon Blanc 2019, Adelaide Hills, South Australia
Sauvignon Blanc's global consumption is on decline. It's not a wine people are excited to drink, and that's because not everyone has had this wine from Shaw and Smith. This wine finds the narrow delicious window between the slight herbaceous character of Sauvignon Blanc, its bright forward citrus fruit profile, and its ability to push forward minerality on the palate. This Sauvignon Blanc is just right.

Penfolds Bin 17a Chardonnay 2017, Adelaide Hills, South Australia
For all of the love Penfold's gets for its red wines, many believe that they produce some of the absolute best Chardonnay's within Australia. Bin 17a is crafted from the Adelaide Hills. It strikes and incredible balance between rich, ripe and round orchard fruits coated in a spicy vanilla caramel, and a salty bright finish that finds a perfect midpoint between two extremes. This Chardonnay is loud, and delicious.

Red

Heirloom Private Selection Pinot Noir 2018, Adelaide Hills, South Australia
Pinot Noir is fairly new to Australia, but its origin begins in the Adelaide Hills when it was used strictly for sparkling wine. Heirloom is dedicated to preserving historic South Australian viticultural customs, and their Private Selection Pinot Noir takes old plantings once used for bubbles, and creates a perfumed and precise Pinot.

Moss Wood Ribbon Vale Cabernet Sauvignon 2016, Margaret River, Western Australia
Planted in 1969, Moss Wood is an important, founding estate of the Margaret River region. Small amounts of Cabernet Franc and Petit Verdot contribute a little extra complexity and aromatics. Deep and dense in colour notes of cassis, wild bramble, violet, spearmint and anise come forward. A generous palate retains freshness and vigour amongst earthiness and oak.

Mayer Volcanic Syrah 2021, Yarra Valley, Victoria
"This comes off 20-year-old vines in Gembrook, the Pancake Creek Vineyard. Timo uncovered this site (with the wine formerly made onsite and never commercially released), and what a vineyard it is. This is a compelling argument that Shiraz/Syrah is capable of making some of the Yarra's best reds, with a nose of swirling complexity of wild red and black berries, pepper and fragrant spices, with red florals accenting. In the midweight camp, the palate is both succulent and structured with a fine web of lacy tannins and line of ripe acidity supporting. A brilliant release."

Lillypilly Noble Blend 2015, Riverina, New South Wales
This is one stunningly aromatic dessert wine with tropical fruits and glorious fresh vital passionfruit, lychees and pineapple. This wine is a lighter style with lively acidity supporting the fruit characters. Sweet but balanced and seamless in delivery, it will leave you wanting more.

Penfolds Grandfather Fine Old Liqueur Tawny, South Australia
In 1915, an oak cask containing a blend of the finest tawnies the company possessed was set aside for the exclusive use of the Penfold family. This became known as "the Grandfather" due to the great age of the oldest tawnies in the blend. Penfolds Grandfather Liqueur Tawny, a blend of the finest old tawnies and aged in small oak casks, honours this proud tradition and is Australia's leading example of this style. The rich yet delicate fruit character harmonises perfectly with pronounced aged rancio complexity to produce a truly remarkable aged liqueur tawny.
