I had the same idea and booked the 787 flight MAD-AMS in late December.
Most days, the flight was operated by a 789 with the new business class (1-2-1).
On my flight date, it was listed with a 788... ok, I thought, that will be the old 2-2-2 business class.
Turned out to be one of the planes the took from Norwegian with 2-3-2 "premium seats" rather than true business.
As others said, not bad for a 2.5 hour flight, but was still somewhat disappointing.
Meal was basic, but crew were attentive.
There were about 8 people in business, counting my partner and I.
