First Wine List
Champagne
Bollinger La Grande Annee 2014, Champagne, France
This pinot noir dominant wine is fermented entirely in oak barrels, some of which are nearly 100 years old. The result is a rich, complex and structured vintage Champagne. Hazelnut, peach and almond are elevated by a fine sea-air finish. Building complexity, minerality and incredible intensity are complimented by notes of cherry, quince and lemon. A memorable wine.
White

The Lane Gathering Sauvignon Blanc Semillon 2020, Adelaide Hills, South Australia
The wine reflects the unique terroir of the estate more than any other. The blend of Sauvignon and semillon combined with the barrel fermentatio [sic], ripe flavours, minerality and complexity are mirror on the site in which it is grown. An incredibly versatile and foof [sic] friendly wine that offers amazing texture and bright flavours when young, but ages gracefully over many years.
Penfolds Bin A Chardonnay 2018, Adelaide Hills, South Australia
This wine has evolved to be a single regional Chardonnay with 100% of the fruit coming from the Adelaide Hills. Aged in some new and seasoned French oak it has a great deal of weight, layer and complexity. Citrus fruits move into stone fruits, gun flint and mineral. The palate has weight, concentration and length that only the top wines can every achieve.
Red
Applecross Pinot Noir 2018, Yarra Valley, Victoria
While David Bicknell has a grand reputation for making world class Chardonnay, he's no slouch with Pinot Noir either. Applecross is the side project for Dave who's day job is Chief winemaker at Oakridge in the Yarra Valley. This is perfumed, pure with bright red and black fruits. The palate is lacy, silky and long. Very graceful.

RWT Bin 798 Penfolds 2018, Barossa Valley, South Australia
The initials RWT stand for "Red Winemaking Trial", the name given to the project internally when developmental work began in 1995. The style is opulent and plush, in contrast with Grange, which is typically muscular and assertive. This lush and aromatic approach is helping to redefine the classic Barossa shiraz. It is a celebration of the elegance French oak can add and the more graceful side of Australia's favourite red varietal.
