I've been wondering similarly.
Seems like the 789s were taking about 45 days, until Covid lockdowns hit XMN. The first 764 conversion took over 100 days, which might be expected, but the second conversion (N67052) is just now getting out after 107 days. N76054 is still in the shop, at 75 days as of today.
As for the 763 PP seats, the first (N642UA) took 81 days, It is unclear how tong the next ones will take.
Apropos that, the fleet web site has some inconsistencies. The Mainline Fleet page shows N641UA in XMN for MX, and N643UA in XMN for PP. The Polaris Mods page modline tab shows both in XMN for PP mods. In fact, N643UA is in HKG, not XMN. I don't have a paid subscription to FlightAware, but Flightera.net shows it arriving in HKG on Dec 20 as flight 2830 (
https://www.flightera.net/en/planes/N643UA).
