It really depends what your interests are and how far you'll travel on day trips from each 'base'. If you are really into fine dining and wines then you could easily fill a week in Cape Town and the winelands (Franschhoek and Stellenbosch are within 1 hour drive of the city centre), equally if you like urban living and happy doing day trips back to a base in the city. Equally you can see the highlights of Cape Town city in ~3 days (e.g. by taxi or HoHo bus: Table Mountain, Robben Island, museums, Lion's Head or Signal Hill, Camps Bay / Clifton beach, Constantia and Kirstenbosch Gardens), plus the Cape Peninsula is a full day tour or drive from the city (Simon's Town for the penguins, Cape Point and Cape of Good Hope, Hout Bay and Chapman's Peak drive). Places like the winelands and Hermanus / De Kelders / Gansbaai (coast, whale watching in season, hiking and/or wines) can be seen on a day trip from the city or you can change base to spend time there.
Plan a one-week visit in December this year at Cape Town region, 4 nights at Constantia, 2 nights at Hermus, should we hire a driver or get a rental? Thanks
