The outbound seats have been available for four months so I doubt they'll go in the next few days - and I have flexibility for the outbound but not the inbound. If I grab the outbound, I won't be able to book the inbound online. I'm well aware that I will be in competition with many others for the inbound thus want to be able to book that online without added complications, so that is my priority.

Either set up the return flight search you want online at T-355 and attempt to book the return in one go. This saves change fees but will take 1 more screen to select yhe outbound.
Or book the outbound now and either call to add the return at T-355 or if you have enough Avios book the return one-way seats online and call to have the voucher applied and half the Avios refunded (can someone confirm this still works).
Edited: seems the new voucher doesn't have the UK origin requirement (guess because it can be used on EI and Iberia).
I can't book both legs online at the same time as this is open jaw.
I think it is too risky to chance getting a call answered and explain what I want to do and get the agent to be ready to grab the inbound flight at exactly midnight. And if I use the voucher online I will have the extra availability (I class?) which I wouldn't have if I had already "used" the voucher.
I'm still interested to know if anyone can answer my query.
