Interesting topic, and an interesting angle (theme) to take when planning a trip. Many of the manor/estate/castle hotels scattered around the UK and Ireland would fall under this category and it would be quite an extensive list, even with a genuine luxury requirement (i.e. Heckfield Place, The Balmoral, Ballyfin, etc.). There are tons that were falling apart and have been saved by being turned into hotels.
