After several minor changes , we are on different flights from SYD-AKL : Me and kiddo on QF 147, 5.25pm-10.35pm , the wife on QF149 , 7.15pm-12.25am. Do I have a viable option at check in at NOU to switch my wife’s flight to the earlier one , either paying with cash or miles? Or because the ticket is issued on AA stock is a firm no and I should try to reticket my reservations while there is award availability…

With NOU being a remote outstation I doubt if they would have authority to change tickets. Staff at NOU unlikely to be direct QF employees.
Even in AU at larger airports check-in and ticketing are different people/functions. Check-in will send to you to a service desk (where they exist) or tell you phone QF. QF check-in staff do not deal handle money or ff miles
Cannot see mixing AA ff miles and cash at a QF desk / phone working. As an Advantage award tickets my guess is only AA can change.
If you have checked bags all tagging will be done at NOU and interlined. Would need to get sorted out before NOU. A passenger choosing to fly on a different flight to bags is generally not allowed
