I'm sure somebody somewhere could waive a magic wand and make it happen the way the OP wants, but it wouldn't be a part of the standard way of doing things.
My Hyatt Concierge has modified reservations for me multiple times. Take a day out, add a day, switch some nights to points or vice-versa. Never a problem.
